The rice calendar in the Nan valley runs from flood to flood, and a three-day visit can only ever see one third of it. The programme says so, and is written so that whichever third you arrive for is a complete experience.
What is constant is the water. Rice in this part of Thailand is an irrigation problem before it is a farming problem, and the household that hosts you will explain the channels before the crops.
Physical work is genuine and optional in the sense that a host will not resent a guest who cannot manage it, but nobody will pretend it is light.

Full field day
Early Morning In the fields before the heat. Late Morning The heaviest task of the cycle. Afternoon Rest, then help prepare the evening meal. Evening Dinner. Night Homestay, second night. -

Harvest and return
Morning Harvest what is ready, if the season calls for it. Late Morning Talk about the year ahead and the price risk. Afternoon Return to Nan. TBD — departure time must be confirmed.
