Three days is long enough to stop being a visitor and short enough to stay polite.
The first night is in a river settlement where the water decides the rhythm. Boats, fishing, laundry, and a kitchen that feeds people at whatever hour they come home.
The second day crosses the ridge into a hill village. The pace changes completely: fields instead of water, footpaths instead of roads, and a household economy that is organised around one crop at a time.
The second night is in that village, where you will be fed more than you can eat and asked more questions than you can answer.
The third morning is for leaving slowly, because the goodbyes in these places take as long as the arrivals.

DAY01
Down to the river settlement
Morning Leave the city for the valley floor. Late Morning Arrive at the river settlement. Walk with a host along the water and through the lanes behind it. Afternoon Time is spent on whatever the settlement is doing: mending nets, sorting a catch, helping at a house. You follow, not lead. Evening Dinner by the water. The household will want to know why you came, and it is fine to answer honestly. Night Homestay one, river settlement. -
DAY02
Over the ridge to the hill village
Morning Travel up into the hills. The landscape changes from water to forest to fields. Late Morning Arrive at the hill village. Meet the family and be shown the fields and the crop calendar. Afternoon Work in the fields or the kitchen, depending on what is needed. Then walk the village with a young resident who explains what it is like to grow up here and what they plan to do. Evening Long dinner. Expect questions about your own life; answer them. Night Homestay two, hill village. -
DAY03
Slow morning and return
Morning Breakfast with the family. No rush. Late Morning Walk once more around the village with the host. Talk about what you would need to know to come back. Afternoon Return transport to Chiang Mai. TBD — departure time must be confirmed.
