Highland tea in Mae Hong Son is picked by hand and processed in a household, not a factory. The quality argument is made over hours of withering, not in a tasting note.
Three days follows the leaf: garden, plucking, withering, rolling, drying, and then the cup. You will do at least two of those stages yourself.
The tea gardens are on slopes that make working them hard, which is part of why this programme is treated as an experience rather than a sightseeing tour.

Morning Travel to the tea household. Late Morning Walk the garden, learn the picking rules. Afternoon Pluck tea alongside the family. Evening Dinner. Night Homestay one. -
DAY02
Processing day
Morning Withering and rolling, which takes most of the morning and cannot be hurried. Late Morning Drying over the heat. Afternoon Taste and compare the results of each stage. Evening Dinner. Night Homestay two. -
DAY03
Tasting and return
Morning Final tasting with the family, take tea home. Late Morning Return to Mae Hong Son. Afternoon Free time. TBD — return time must be confirmed.
